Mix, knead, and roll fresh pasta dough from scratch, then cut and shape it into classic forms including tagliatelle, pappardelle, and farfalle. Chef instructors explain the science of gluten development, hydration, and resting time so students can replicate the results at home. Each student takes home their pasta to cook that evening.
