The Pantry's Wednesday fermentation class covers the science and practice of lacto-fermentation, including sauerkraut, kimchi, and fermented hot sauce. Students learn how salt concentration, temperature, and time interact to create flavor, and each person leaves with jars of their own fermented vegetables. Instructors also discuss troubleshooting, storage, and the role of beneficial bacteria in fermented foods.
