The sparkling wine class at U Street Wine Studio covers the traditional method used to make Champagne and how it differs from the Charmat method used for Prosecco, along with regional styles from Spain, England, and the American sparkling wine scene. Students taste six to eight sparkling wines with the instructor explaining disgorgement, dosage, and the difference between Blanc de Blancs and Blanc de Noirs in terms the class can taste rather than just memorize. The session ends with a deep dive into pairing sparkling wine with food, which most students find immediately useful.
