The Gourmandise School at Santa Monica Place teaches sushi rice preparation, fish selection and portioning, and the technique for rolling maki, hand rolls, and nigiri on Friday evenings in a hands-on class for six to eight guests. A chef walks through knife skills and how to evaluate fish quality before you assemble several rolls and plates to share with the group. All fish, rice, nori, and accompaniments are provided.
