OSAKANA's Thursday knife skills class is dedicated to the yanagiba, the long, single-bevel slicer used for sushi and sashimi. Students learn how to hold the knife, draw-slice fish cleanly, and care for a single-bevel blade. After the knife skills portion, the class pivots to making sashimi and nigiri from the fish just sliced.
