The handmade pasta workshop at Charleston Cooks teaches students to make fresh egg pasta dough from scratch, rest and roll it properly, and cut it into classic shapes including fettuccine, pappardelle, and filled pasta like ravioli with seasonal fillings. The instructor covers hydration ratios, gluten development, and the sensory cues for knowing when dough and pasta are ready at each stage. Students cook and eat the pasta they make at the end of class, paired with a sauce the instructor prepares during the pasta-making portion.
