12South Cooking School fresh pasta class teaches students to make egg pasta dough from scratch and cut it into fettuccine, tagliatelle, and simple filled shapes using hand and machine rolling. The instructor focuses on the feel of the dough at each stage so students learn to judge readiness by touch rather than by timer or measuring cup, which is the key to replicating fresh pasta successfully at home. Students cook and eat the pasta they made together at the end of class, with a sauce prepared by the instructor during the pasta-making portion.
