Dandelion Chocolate Factory runs this Sunday morning workshop at their Mission District factory covering the full bean-to-bar process, including cacao sorting and winnowing, stone grinding, and tempering a finished chocolate bar to take home. The factory uses single-origin cacao from small farms and the instructor explains the flavor differences between origins during the tasting portion. Participants leave with two to three bars of chocolate made during the session plus an understanding of why the flavor of finished chocolate reflects decisions made throughout processing.
