Dandelion Chocolate's truffle-making class runs for 90 minutes in the factory on 16th Street, where a chocolatier teaches you to temper dark chocolate, prepare and flavor ganache, and roll and coat finished truffles using single-origin Dandelion chocolate. The class covers the difference between properly tempered and untempered chocolate at a sensory level before moving into the hands-on work, so you understand what you are aiming for rather than just following steps. You leave with a box of truffles you made and a recipe card.
