Mattarello Cooking Lab's Monday pasta class walks students through making fresh egg pasta dough from scratch, rolling it by hand and through a pasta machine, and shaping it into the style of the day, which rotates weekly among tagliatelle, pappardelle, ravioli, and other Italian classics. The instructors are trained in traditional Northern Italian technique and guide every step from flour selection to plating. Participants enjoy their finished dish at the table before heading home with a batch of fresh pasta wrapped for dinner.
