Mattarello Cooking Lab's Friday pasta workshop is a hands-on session where students learn to mix fresh egg pasta dough from scratch, roll it by hand, and cut it into multiple pasta shapes including pappardelle, tagliatelle, and a filled format. The class covers how to judge dough texture and hydration by feel, which is the most important skill in Italian pasta making. Students share a meal of the pastas they created together at the end.
