Chef Mat teaches a menu of Japanese izakaya-style small plates, the casual bar food found in Tokyo's neighborhood drinking establishments, covering techniques like yakitori skewering, agedashi tofu frying, and the proper seasoning of a simple dashimaki tamago egg roll. Students prepare six dishes during the session, working through the prep that makes each dish achievable at home without specialty equipment. The class closes with a shared izakaya-style spread eaten together.
