Chef Kevin teaches the fundamentals of Spanish paella in this weekend evening class, covering the essential sofrito base, how to achieve the coveted socarrat crust on the bottom, and why stock temperature matters for even rice cooking in a wide paella pan. Students work in small groups to assemble a seafood and chicken paella from scratch, developing an intuition for timing that can't be learned from a recipe alone. The class ends with a shared feast paired with Spanish-style accompaniments.
