Chef Ansarys guides a small group through the fundamentals of Japanese sushi preparation, from proper rice seasoning and rolling technique to fish selection and knife work. Students practice making nigiri, hand rolls, and a classic maki roll from scratch using fresh ingredients sourced the day of class. Everyone eats a full sushi spread at the end and takes home a set of recipes to recreate the dishes at home.
