Monday is red beans day in New Orleans, and this class teaches students why kidney beans slow-cooked with smoked sausage, the trinity, and a careful hand with seasoning became the city's most enduring weekday tradition. After learning the pot, students move on to pecan pralines, one of the most technically challenging Louisiana sweets, and practice the sugar-cooking and cooling technique that produces the proper sandy-creamy texture rather than a sticky or gritty result. Each participant walks out with a container of pralines they made themselves and a working understanding of both recipes they can recreate confidently at home.
