Learn the ganache preparation technique that forms the foundation of hand-rolled chocolate truffles, including how to adjust cream ratios, incorporate flavors such as espresso, citrus, and fleur de sel, and achieve the proper texture for rolling and coating. The instructor demonstrates each step before students work at their own stations, and the session ends with a tasting and comparison of everyone's finished truffles. All ingredients are included and every participant takes home a box of twelve truffles.
