A nearly four-hour cooking class covering the soul of New Orleans cuisine, including roux-based gumbo, crawfish etouffee, and classic bread pudding with whiskey sauce made from scratch. Instructor Karen Duncan walks students through every technique from building the holy trinity and developing a proper dark roux to finishing each dish with authentic Creole seasoning. Every participant eats the meal they prepared together at the end of class and leaves with printed recipes to recreate the dishes at home.
