A Sunday morning hands-on cooking class focused on the brunch traditions of South Louisiana, covering baked French toast stuffed with cream cheese and seasonal fruit, a chicken and andouille hash with Creole seasoning, and the dark café au lait that New Orleans has been making properly since the 1800s. Students learn the specific seasoning philosophy behind Creole brunch food, bright acids, herbaceous notes, and measured heat, and apply it through a sequence of hands-on exercises that build both skill and confidence at the stove. The group sits down together at the end of the session to share the meal they cooked, making Sunday mornings at this school a genuinely social as well as educational experience.
