Dash of Soy's Thursday dumpling lab teaches the folding, pleating, and steaming techniques behind har gow, siu mai, and pan-fried potstickers from scratch. Students make their own wrappers from flour and water, prepare two fillings, and cook each dumpling style side by side for comparison. The class ends with a full tasting and discussion of dipping sauce combinations.
