About this class
Cacao grows in a narrow band around the equator, and different growing regions produce beans with dramatically different flavor potential. This workshop walks through the five major cacao-growing regions using Taza's sourcing network, tasting a chocolate from each to identify the fruity, earthy, nutty, and floral notes tied to origin. You also learn how fermentation and drying at the farm level affect the flavor the chocolate maker receives.
