Preserved's fresh mozzarella class teaches you to stretch and shape mozzarella from curd in a single two-hour session, covering the temperature control and hand technique that determines whether the result comes out silky and elastic or grainy. The session also covers a simple ricotta using acid-set method as a comparison, and all the cheese made during the class is served with bread, olive oil, and fresh tomatoes at the end. All ingredients are provided.
