About this class
Starting from cacao nibs, this class walks through the steps of grinding, refining, and tempering chocolate from its base ingredient rather than working with pre-made couverture. Students taste cacao at each stage to understand how the process transforms raw bitterness into finished chocolate, and they mold and cool a bar of their own formulation to take home. The instructor covers the flavor contributions of origin, fermentation, and roast throughout the session.
