Bean-to-Bar Chocolate Workshop

Cacao Portland's bean-to-bar workshop takes you through the full chocolate making process, from roasting and cracking cacao nibs through winnowing, grinding, conching, and tempering into finished bars. You taste at multiple stages to understand how processing decisions create flavor, and you leave with bars you made yourself from raw cacao. The workshop draws on the deep product knowledge that drives Cacao's own in-house chocolate program.
