At Mattarello Cooking Lab, the pasta-making class begins with selecting your pasta shape and sauce from the menu, then rolling up your sleeves to make the egg dough, roll it out, and cut it by hand with guidance from the instructor. The experience walks you through every step of fresh pasta production so you understand not just how to do it but why each step matters, from resting the dough to the final cook. Class ends with sitting down and eating the pasta you just made, accompanied by Italian bread and a glass of wine or other beverage.
