About this class
The Meadow's summer cooking class is built around what is at peak season in the Pacific Northwest: Dungeness crab, wild salmon, Walla Walla onions, Willamette berry varieties, and the herbs that grow prolifically in Portland backyards through summer. You cook a complete meal from these ingredients and eat together at the end, and the instructor talks about sourcing and seasoning as you work rather than keeping the food-knowledge separate from the cooking itself.
