The Civic Kitchen's Japanese knife skills class covers the fundamentals of the Japanese approach to cutting, from proper grip and posture to precision cuts used in Japanese cooking including katsuramuki (rotating vegetable cut), usuzukuri (paper-thin slicing), and careful filleting technique. The instructor provides context on how knife care and sharpening are central to the craft, and participants practice on a variety of produce and proteins throughout the session. The class ends with a tasting of the dishes made using the techniques covered.
