A Saturday chocolate class at Seabreeze focused on molded bonbons, covering the techniques of tempering chocolate, filling molds with ganache, and sealing and releasing finished pieces. Students learn how to work with both dark and milk chocolate and how small variations in temperature affect the final result. Each participant takes home their handmade chocolates at the end of the session.
