About this class
Saison and farmhouse ales are brewed with yeast strains that produce unique phenolic and fruity compounds not found in other beer families, and this workshop explains how fermentation temperature, pitch rate, and nutrient additions steer those flavors. You assist in a small-batch farmhouse brew on a pilot system and taste the finished beer from a previous batch alongside the components that went into it. The brewer shares the sensory targets used before each farmhouse batch is packaged.
