Their small-group baking classes of no more than eight students are taught in the working bakery kitchen by Chef Olivier himself, covering the full process from mixing and folding to shaping, proofing, and baking. Students take home everything they make along with recipe and timing cards, and the classes have been voted Best Baking Class in NYC by Vogue.
