Bettie's Chicago's sourdough intensive covers everything from maintaining a healthy starter through building a levain, mixing and bulk fermenting a high-hydration dough, shaping and scoring, and baking in a Dutch oven at home. The session runs across two days, with day one covering mixing and fermentation and day two covering shaping, scoring, and baking, giving students time to see their dough develop naturally between sessions. This is a multi-session course spanning two days. You take your finished loaves home.
