Chef Paul walks students through a full French countryside menu in Miette's loft kitchen, working through dishes like gougères, roasted Cornish hen, seasonal vegetable sides, and a raspberry soufflé from start to finish. Students work at individual stations with all ingredients provided and eat the full meal together at the end with wine. Classes rotate through seasonal menus and run on weekday evenings and weekend afternoons throughout the year.
