About this class

This date-night class focuses on the food of the French Riviera, fresh seafood, good olive oil, ratatouille, and a fish preparation that reflects the clean, bright flavors of coastal Provence. You cook through the full menu at a shared workstation, and the instructor covers the small techniques, how to handle fresh fish, how to build a proper bouillabaisse base, how to make tapenade worth eating, that define the cuisine. Dinner is served at the end with wine.
