Colorado Sake Co. brews more than 12 sakes daily on-site and the tasting flight walks you through four pours spanning junmai, nigori, and sparkling styles with a staff member explaining how rice polishing ratio, brewing temperature, and koji mold create the flavor differences between each glass. The RiNo brewery is the only sake production facility in Colorado and seeing the fermentation tanks in the background makes the tasting more tangible. No prior sake knowledge is needed.
