This pizza workshop at the Gourmandise School covers the full process of making Neapolitan-style pizza from scratch, starting with mixing and hand-shaping a high-hydration dough, making a simple tomato sauce from whole San Marzano tomatoes, and building and baking a pie in the school kitchen. The instructor focuses on developing feel for the dough, which is the part you can only really learn by doing it with someone watching your technique and giving you real-time feedback. Everyone eats what they made at the end, and recipes to take home are included in the class fee.
