Sushi at a Japanese restaurant feels impossibly precise. the vinegared rice temperature, the shaping pressure, the knife work on fish. This 2.5-hour class demystifies all of it. You'll make seasoned sushi rice from scratch (the rice vinegar and sugar ratio, the temperature when you fan it), roll maki with nori, shape hand rolls for snacking, and form two pieces of nigiri by hand. Taught in pairs so each person gets hands-on time. A sake pairing is included. All fish is restaurant-grade and sourced fresh that day. Recipe card to keep. All equipment and ingredients provided.
