About this class
Atelier Sucré's croissant workshop teaches the full lamination process from scratch in a maximum class size of four students, covering dough mixing, butter block preparation, the classic fold-and-roll sequence, shaping, and the final bake. Chef Simon trained as a classical French pastry chef and the technique he teaches here is the same one used in professional bakeries, scaled down for a home kitchen. All ingredients and equipment are provided and you take everything you bake home at the end of the three-hour session.
